The subject of an often heated (ha) debate, leftover pizza - better cold or reheated?
I am the self-proclaimed leader of the Cold Pizza Revolution. Fearlessly I’ve gone to bat for this straight-out-of-the-fridge option for years. Growing up, while working for the neighborhood pizza place, I would take my “shift pizza” out of the blazing hot oven and place it straight into the cooler. The pizza makers would tease the shit out of me for this but I stood my ground. Until, ALAS! An unknown pizza soul introduced me to the skillet reheat and my first love is forever challenged.
Earlier this week - while finishing a slice of reheated, leftover pizza from my cast iron skillet - I took my opinions to Facebook, the official “judge and jury,” to share my sentiment on the preparation. I assumed the post would get the traditional backlash of cold vs. reheated leftovers. However, I was not prepared for the number of people who have never tried this method! Dan Gigler, journalist for the Pittsburgh Post-Gazette, commented on the post,
“This is all fascinating. A possible paradigm shift in the making. Like, the first 39 years of my life have been a lie.”
The crispy, flaky, light texture that comes to the crust of the pizza is unmatched by any toaster over or (gulp) microwave. How could so many pizza enthusiasts be missing out on?
If reheating pizza is a form of art, I’m going to take this opportunity to introduce a new technique. I give you the Skillet Reheat.
Warm a nonstick skillet to medium heat. I prefer to use a cast iron for its excellent heat retention - and also because mine is a well-seasoned beast.
Place leftover pizza in center of pan and cover for 2-3 minutes, to allow toppings to warm and cheese to slightly melt.
Remove lid from pan and continue to cook over medium heat. This is the part where the crust becomes crispy and food porn-ish.
Eat that shit.
I wish I could recall the pizza elder who bestowed this 10th level knowledge upon me. There are mad props to give and “thank you’s” to shout. Cold pizza will always hold a top spot in my heart. But if I choose to warm it, it’s skillet reheat all day.
